Bajed Creole Eggplant
Ingredients
- 2 eggplant, diced
- 1 onion, chopped
- 1 C raw peeled shrimp
- 1 stalk celery, chopped
- ½ C butter or oil
- Cajun seasoning to taste
Directions
- Boil eggplants until soft.
- Saute onion, chopped shrimp, and celery in butter or oil and combine with eggplant.
- Put in buttered baking dish and sprinkle with bread crumbs.
- Bake 30 minutes at 350°
